75 ml Fresh orange juice
50 ml Fresh lime juice.
250 ml Still water
A Pinch of sea salt
1 Whole lime peel
½ Whole orange peel

Using your muddler, pound and crush the peels together with the salt until they are soft and glossy from the oils extracted. Add the two juices and water to the muddled peels. Stir carefully to dissolve the salt and lift all of the oils from the peels. Taste the mixture to make sure it’s in proper proportion. The water and orange juice should help balance out the acidic lime juice, and the salt is there to bring out the flavors, not to make the drink taste salty! Sieve the mix into a sterile bottle and store it in the refrigerator. To get it nice and chilly, chill it for 90 minutes (depending on how much you created). It will stay good for at least three days. When you’re ready to make a Margarita, take the mix out of the fridge and combine it with your favorite Tequila or Mezcal over ice, then garnish.
