Place a few pieces of fruit into each ice lolly mould, along with a mint leaf. Top with the tequila mixture and place in the freezer overnight to set.

These Blueberry Margarita Ice Lollies are easy to prepare and perfect for summer. You might already have most of the ingredients in your kitchen and now’s the time to turn them into something truly special:
- 100g of sugar
- 120ml / 4 parts of water
- A large handful of fresh mint leaves, stalks removed
- 180ml / 6 parts of lime juice
- 90ml / 3 parts of Olmeca Altos Reposado tequila
- 170g / 6 oz of fresh blueberries (or other seasonal fruit, rinsed and sliced if needed)
- Ice lolly moulds
Method
To begin, you’ll want to prepare a mint-infused syrup that forms the aromatic base of this recipe. Simply combine the sugar, water, and most of the mint leaves (keeping a few aside for later) in a small saucepan. Warm the mixture gently over a medium heat, stirring occasionally until the sugar is completely dissolved.
Once ready, take it off the heat, discard the used mint leaves, and allow the syrup to cool to room temperature. Once cooled, strain the syrup into a large mixing bowl and stir in the lime juice and Olmeca Altos Reposado tequila, blending everything together until fully combined.
Now it’s time to build your ice lollies: drop a few blueberries and one of the reserved mint leaves into each mould. Carefully pour over the tequila mixture, ensuring the fruit is evenly distributed, and place the moulds in the freezer. Leave them to set overnight for the perfect frozen finish.
