- 25ml freshly squeezed lemon juice
- 20ml sugar syrup or sweetener of choice
- A 2.5cm piece of fresh ginger root for an extra kick
Method
- Steep the chillies in the tequila and leave to infuse for around 5 minutes.
- Meanwhile, combine the ginger with the lemon juice and infuse for the same amount of time.
- Fill a cocktail shaker with ice.
- Strain the infused tequila into the shaker, then add the ginger-infused lemon juice.
- Shake vigorously until the outside of the shaker feels thoroughly chilled.
- Double-strain into a chilled, salt-rimmed glass.

Ginger and Mint Margarita
The natural heat of ginger brings a tantalising edge to this Margarita, while fresh mint keeps everything pleasantly aromatic and balanced.
Ingredients
- 50ml Tequila Altos Plata, 100% agave
- 20ml freshly squeezed lime juice
- 30ml Cointreau, or agave syrup for a Tommy’s-style version
- 2 slices of fresh ginger
- 5 fresh mint leaves
Method
- Muddle the ginger and mint together in a cocktail shaker to draw out their flavours.
- Add the remaining ingredients and fill with ice.
- Shake thoroughly until well chilled.
- Fine-strain into a chilled glass.
- Garnish with an orange twist or your preferred decoration.
Spicy Ginger Margarita
A margarita recipe that goes the extra mile on heat, this one’s for those who like their cocktails with a proper kick, achieved with the addition of fresh jalapeño.
Ingredients
- 60 ml blanco tequila
- 1½ tbsp freshly squeezed lime juice
- Lime wedges
- 1 tsp finely minced jalapeño chilli, plus extra slices to garnish

- Muddle the mint leaves to release their aroma.
- Add the tequila, syrup and lime juice.
- Fill with ice and shake well.
- Strain into salt-rimmed glasses, garnish, and enjoy.
