Tequila ageing is the process of storing freshly distilled tequila in barrels for a specified period to enhance its flavour, aroma, and character. During this time, the tequila interacts with the wood of the barrels, absorbing its compounds and characteristics. This imparts additional layers of flavour and aroma to the spirit.

Ageing is particularly effective at softening the intensity of young and robust tequilas, creating a smoother drinking experience. The duration of barrel ageing can range from a few months to several years, allowing the flavours to blend and balance. The result is often a tequila that is more refined and pleasing to the palate.

Añejo, Blanco and Reposado Tequila Aging Process

Tequila is aged in oak barrels, and the time it spends in these barrels determines its classification: Blanco, Reposado, or Añejo.

  • Tequila Blanco: Also known as “silver” tequila, this variety is bottled immediately after distillation without undergoing an ageing process in barrels. Its flavour is fresh and pure, with pronounced notes of raw agave and a vibrant character. Blanco tequila is ideal for cocktails like Margaritas, where its crispness shines through.
  • Tequila Reposado: Olmeca Altos Reposado tequila is aged for at least five months in 180-200 litre oak casks. During this period, the tequila absorbs flavours and aromas from the wood, resulting in a smoother taste and a subtle golden hue. Expect notes of vanilla, caramel, and spice, making it perfect for sipping neat or enjoying in cocktails like the Paloma.
  • Tequila Añejo: Aged for a minimum of 12 months in 180-200 litre casks, Añejo tequila boasts a dark amber colour and an exceptionally smooth, complex profile. The extended ageing period imparts rich flavours of caramel, vanilla, nuts, and a hint of oak. Añejo tequila is best savoured neat or in single shots to fully appreciate its depth and richness.

What Factors Affect the Aging of Tequila?

The ageing process of tequila is shaped by several key factors that significantly influence its final flavour and quality:

  • Type of Barrel: The choice of oak barrel plays a crucial role in the ageing process. Some distilleries use new barrels, while others prefer barrels previously used for ageing spirits such as bourbon. Each type of barrel adds unique nuances to the tequila, influencing its aroma, colour, and flavour profile.
  • Barrel Size: Smaller barrels create a more intense interaction between the tequila and the wood, accelerating the ageing process and resulting in bolder, richer flavours. Larger barrels, on the other hand, may produce a more subtle and refined outcome.
  • Environmental and Storage Conditions: The temperature and humidity levels in the ageing warehouse are critical. Variations in climate and seasonal changes affect how flavours are extracted from the wood and absorbed by the tequila.
  • Warehouse Altitude: Altitude plays a unique role in tequila ageing. At higher elevations, greater temperature fluctuations occur, which can accelerate the maturation process, yielding tequilas with distinctive characteristics.
