Mexican pork carnitas is a popular dish originating in Mexico. Basically, it is pork cooked until tender and then crisped in a skillet. The result is a delicious, crispy pork dish that is perfect for tacos, burritos or even to eat on its own.
The easiest way to cook carnitas is in a slow cooker, as it allows you to avoid using any additional fat (such as lard) and makes it easy to get perfectly tender meat every time. This recipe uses spices such as oregano and cumin to add layers of delicious flavor.
There are many types of carnitas, and they all vary according to the part of the pig they come from. Carnitas can be made from the lungs, the criadillas, intestines or the pork shoulder, or even from the head and feet of the whole pig! In fact, there are countless variations depending on the part of the pig used.
In our case, the Carnitas Altos recipe uses shredded pork ribs, pork loin and pork shoulder. Our carnitas can be served in tacos or as antojitos, usually accompanied by tortillas or corn tortillas and salsa. They can also be eaten with guacamole, refried beans and rice or potatoes.

Others Variations of the Carnitas Recipe
There are several variations of carnitas recipes. Some call for boiling the meat before frying it in lard, while others suggest browning the meat in oil before adding lard to cook it further. Some recipes call for marinating the meat before cooking, while others suggest using fresh herbs like coriander and thyme instead of dried spices like chili powder or cumin. It all depends on what you like best.
Another of the most famous versions of carnitas is carnita with chipotle. This recipe is similar to the one we showed you, seasoning the meat with chipotle for 6 to 8 hours, shredding it and frying it. You can prepare the carnitas in a crockpot.
